Diet and nutritional metabolites significantly affect tissue homeostasis and disease risk, particularly in the context of rising obesity rates. Obesogenic diets are epidemiologically linked to an increased risk of cancers, including colorectal cancer. The gastrointestinal tract, responsible for nutrient absorption, is continuously influenced by diet composition and metabolic state. Intestinal stem cells at the base of the intestinal crypt play a pivotal role in maintaining the intestinal epithelium and are affected by host diet and metabolic dynamics. Tumorigenesis and tumor metabolism are similarly shaped by nutrient availability. This review examines how dietary changes influence intestinal stem cells in normal and pathological conditions, highlighting their role in cancer development.
