
This study investigates the impact of the sugar substitute stevia on biofilm formation, exopolysaccharide (EPS) secretion, and gene expression in Streptococcus mutans and Streptococcus gordonii, key contributors to dental plaque and caries. The research revealed that stevia significantly reduced biofilm quantity, exopolysaccharide (EPS) production, and the expression of genes related to biofilm formation, such as gtfB and gbpB, compared to sucrose. These findings suggest that stevia may have therapeutic potential in controlling dental plaque and caries by inhibiting biofilm development and downregulating genes crucial for plaque formation in these bacterial species.
