Association of fresh vegetable and salt-preserved vegetable consumptions with estimated glomerular filtration rate

This study explores the relationship between fresh and salt-preserved vegetable consumption and the estimated glomerular filtration rate (eGFR) using data from the Chinese Longitudinal Healthy Longevity Survey. Analysis shows that occasional fresh vegetable intake is associated with a lower eGFR, while rare or no consumption of salt-preserved vegetables is linked to a higher eGFR. These findings suggest a direct positive relationship between fresh vegetable consumption and eGFR, emphasizing the potential benefits of a diet rich in fresh vegetables for improving kidney function in elderly individuals.
