Prevalence and Differentiation of Ultraprocessed, Highly Palatable, and High-Energy-Density Foods Over Three Decades in the United States

A recent study investigated the presence of ultraprocessed foods (UPF), hyper-palatable foods (HPF), and high-energy-density (HED) foods in the US food system from 1988 to 2018. Using data from the US Department of Agriculture, the study found that between 58% to 65% of foods were categorized as UPF, 55% to 69% as HPF, and 37% to 47% as HED. The prevalence of these unhealthy foods increased significantly over the years, with HPF showing the largest rise (14%) and UPF the smallest (4%). The study also revealed substantial overlap (40%–70%) in foods across these definitions.
